The farm cultivates coffee under shade without agrochemicals. They harvest only mature cherries and coffee is sorted by hand. The water used comes from clean rivers in the area.The drying process enforces screenings during the morning from 8:00 am to 11:00 am and from 3:00pm to 6:00pm to get a better and homogenous drying process . The coffee dried is also sorted by hand.

From the náhuatl local language Kosauh-tlan: "Yellow place" or "Golden place". The municipality receives the name “De Carvajal” in honor to the governor “Angel Carvajal Bernal”. It is located in the mountains of Veracruz State. It's weather is tropical with high humidity and an average temperature of 19 °C. Its annual pluvial precipitation is about 1,160 ml.
